This coffee’s super exciting and mind boggling characteristic has developed from the unique approach to fermentation by Felipe!
This Pink Bourbon varietal was grown by Felipe Arcila on his farm Jardines del Edén in the Pijao region of Colombia. This farm is full of nutrient rich soils thanks to the volcanic ashes.
The coffees are picked and they undergo a dry anaerobic fermentation period for a total of 72 hours. During this fermentation Lulo pulp (traditional colombian citrus fruit) is added to the fermentation. After this the cherries are pulped and placed on a drying bed, still with it’s mucilage intact and the Lulo fruit amongst them. They are then left to dry until they reach the desired moisture content.
This combination of anaerobic fermentation and the prolonged infusion with Lulo developed a very unique characteristic in this coffee which we have tasted as tropical fruit notes, sparkling acidity and texture, with lingering floral tea finish!
