La Cima is a selection of coffees produced by small-scale coffee farmers from the San Ignacio, Jaen, and Cutervo provinces located in the Cajamarca Department, Peru. Situated in the northern Andes, the high altitudes and clay soil provide ideal conditions for coffee cultivation.
Coffee cherries in this lot are harvested following strict ripeness criteria, then floated and hand-sorted to remove any defects. They are then de-pulped and exposed to 30 to 40 hours of fermentation. The parchment is then gently washed and dried for 16 to 20 days under temperature-controlled conditions until the ideal moisture content is achieved.
The result is a juicy cup with a bright acidity. Brewed as a filter we pick up notes of apple and white grape, followed by a brown sugar sweetness.
