Specialty coffee cultivation is a relatively recent phenomenon in China. Only 2% of the coffee grown in China is specialty coffee, and we care a lot about promoting it in the UK.
Run by Mr. Li as a family business, Dongka is a farm and washing station located in Menglian County, Yunnan, China. With over 20 years experience in the coffee business, Mr. Li continues to produce some of the most consistent washed specialty-grade beans in the region.
After pulping on the day of the harvest, beans in this lot are dry-fermented for 18 hours, then further dried on raised patios for approximately 10 days. The result is a bright bean with plenty of sweetness, which brews well as both espresso and filter. In the cup we taste notes of candied lime, almond, and caramel.
